This year’s Christmas cake is a moist, fruity, heavy, unleavened and round cake. It has a mixture of raisins, cherries, currants, candied peel, nibbled almonds and mixed spices. The last few weeks each cake got a few dozes of brandy and vermouth. Once full flavour has been achieved, each cake will be covered with, marzipan and topped with sugar paste.
